When we hunt, we seek out wild birds that have flavors not present in their domesticated brethren.  When we forage for mushrooms, we seek out fungus that exudes the flavor of the forest floor.  When we raise pigs, we flood them with fruit to sweeten their flesh.  One of the vital aspects of this whole grand experiment is finding and creating interesting flavors, and capturing the stories along the way.  We are sweetening our flesh, and having a damn good time doing it. If a mountain lion gets us someday down the road, we just hope he has a discerning palette.
